Pineapple Tomato Salsa

Serving Size: 2-3 Cups Salsa
Tomatoes are bursting with lycopene, which is a carotenoid that helps protect cells against damage leading to cancer Don’t forget that you can get the most lycopene if you choose organic over conventional. This sweet salsa is a great dip for a party that everyone will enjoy.
Many studies have found that the lycopene in tomatoes reduces the risk of prostate cancer. Those men who ate more cooked tomatoes, rather than raw, had better results.
1 1/2 cup chopped fresh pineapple
1 cup chopped fresh tomato
1/4 cup chopped red onion
1/4 cup chopped red bell pepper
1 Anaheim chile, roasted, seeds, stem, and veins removed, chopped
OR 1 fresh serrano chile, seeds and stem removed, chopped*
Juice of one or two fresh limes (2-3 TB, to taste)
1/4 teaspoon salt
Combine all of the ingredients in a medium sized bowl.
** Take care when handling hot chile peppers. Use gloves or make sure to wash your hands thoroughly with soap and hot water after handling them. Avoid touching your eyes and face.
