Pineapple Rice

Pineapple Rice




Makes: 6 servings

This rice recipe will be the pineapple of your eye. With a mid-Eastern influence, it goes against the grain of boring rice dishes. Serve with chicken, fish or lamb.

Ingredients
1 cup brown rice
2 tsp. oil
2 garlic cloves, minced
1 1/2 tsp. grated fresh ginger
1/2 tsp. turmeric
1/2 tsp. salt
2 1/2 cups water
1 cup pineapple chunks
1/4 cup chopped scallions
1/2 cup chopped cashews

Methods/steps
In a medium saucepan with a tight fitting lid, combine the rice, oil, garlic, ginger, turmeric and salt. Saute for a minute or two, stirring constantly to prevent sticking. Add the water and bring to a boil. When the water boils, reduce the heat to low, cover and simmer for about 45 minutes, until the water is absorbed and the rice is tender. Stir in the pineapple, scallions and cashews.
