Sweet Potatoes with Sausage and Peppers
Ingredients
2 sweet potatoes, peeled, diced and cooked
1 T. vegetable oil
1 lb. kielbasa or smoked sausage
2 red peppers, chopped
1 onion, chopped
2 tsp. minced garlic
1 cup salsa
1 tsp. cumin
salt and pepper to taste
In a skillet, brown the sausage in the oil. Add the peppers, onion and garlic. Cook until the vegetables are tender. Add the salsa and sweet potatoes. Salt and pepper, if needed.
