Heart Healthy Spaghetti & Mushroom

The next time you're in the mood for Italian, use your noodle and cook up a batch of this heart healthy spaghetti. The fresh mushrooms lend an earthy flavor for a satisfying meal.

2 Tbsp. olive oil, unsalted
1 cup sliced fresh mushrooms
1/3 cup chopped onion
1 clove garlic, minced
1 16 oz. can no-salt-added tomatoes, chopped
1 6 oz. can no-salt-added tomato paste
1/2 cup water
1 tbsp. sugar
1 bay leaf
1/4 tsp. basil
1/4 tsp. oregano
1/8 tsp. freshly ground black pepper
1 8 oz. pkg. of spaghetti

Melt butter in large non-stick skillet over medium-high heat. Add mushrooms, onion and garlic. Sautee' until onion is tender. Stir in remaining ingredients except spaghetti. Cover and simmer over low heat 2 hours, stirring occasionally. If sauce appears too thick, add additional water. Remove bay leaf. Cook spaghetti according to package directions, omitting salt. Drain. Pour sauce over spaghetti and serve.
