Fried Matzoh

Fried Matzoh

Makes: 4 servings

The flat matzo patties are reminiscent of potato pancakes. However, they're largely made from matzo and eggs. Serve at breakfast, lunch or dinner. They even work as a snack when slathered with butter.

Ingredients
Cooking spray
2 tsp. oil
4 matzos
4 egg whites
Onion powder to taste
1/4 tsp. kosher salt
1/8 tsp. black pepper

Methods/steps
Coat a large nonstick skillet or griddle with cooking spray and add 1/2 tsp. of the oil. Heat the skillet over medium-high heat until very hot. Meanwhile, moisten the matzo with cold water and crumble into a bowl. Add the egg whites and seasonings.
Spoon half the mixture into the hot skillet or griddle as one large pancake and brown. With a wide spatula, lift the matzo and add another 1/2 tsp. of oil. Brown both sides. Repeat with remaining mixture and oil.
