Lemony Asparagus
Makes: 8 servings

This boiled asparagus dish gets extra help from a mouth-watering marinade of lemon, butter and a sprinkle of Parmesan cheese. Bring those spears to a rolling boil and a rewarding experience is just a bite away.

Ingredients
2 lb. fresh asparagus
2 tbsp. butter
1/4 cup lemon juice
1/2 tsp. salt
Parmesan cheese, grated

Methods/steps
Snap off tough ends of asparagus; remove scales from stalks with a vegetable peeler. Cook asparagus in boiling water to cover 5 minutes or until crisp-tender; drain. Plunge into ice water to stop the cooking process; drain. Melt butter in a skillet over medium heat; stir in lemon juice and salt. Add asparagus; cook just until heated. Transfer to a platter. Drizzle with sauce; sprinkle with grated Parmesan cheese and serve immediately.

This sounds so good and Asparagus is my favorite veggie, but can't have any while i'm on blood thinners! I guess I'll just save this receipe for when I get off of them.
