Orange Chicken Florentine

Life is but a cream when you've got this orange chicken Florentine on the menu. We predict this will become a family favorite, because it’s easy to make and even easier to devour.

Juice from 1 orange
1 cup heavy cream
Garlic powder
Salt and pepper
Dry white wine
2 small chicken breast filets, split and pounded thin
2 oz. cooked spinach, seasoned with salt, pepper, garlic and butter
2 pieces prosciutto ham
2 pieces provolone cheese
Egg wash
6 mushrooms, sliced
1/2 cup pine nuts
2 slices mozzarella cheese

Mix orange juice, cream garlic powder, salt, pepper and wine; reduce until medium-thick sauce consistency. Wrap chicken around spinach, ham and provolone. Dip roll in egg wash, then flour. Sauté in pan, in oil, until chicken is just done. Place roll in baking dish and top with mushrooms, pine nuts, orange sauce and mozzarella. Bake for 10 to 20 minutes at 400 degrees, until spinach is hot and cheese melts.
