Last night I made a (2 lb) beef roast with a jar of pepperoncini peppers & it's liquid... Cooked it in the slow cooker on low for 8 hrs and pulled it apart with a fork. When we're ready to eat it this week, we'll set some on a sesame seed bun with some fresh sliced swiss... mmmMMMM!! (idea is from "A Year of Slow Cooking".) Can be served with mac-n-chz or mashed potatoes.
Today in the crockpot is a pork tenderloin, cut to fit, with 1 Tbsp garlic pepper spice, 1/2 tsp (kosher or sea)salt... cook on low 6 hours, add jar of BBQ sauce and a tsp of seasoning salt, cook two more hours. Pull apart and eat on onion buns with slaw : ) Can be served with sweet potatoes fries or raw cauliflower and dip.
