White Velvet Chocolate Mousse



White Velvet Chocolate Mousse

(add thinly sliced strawberries for garnishing 'hearts')

Serves: 6-8

Creamy, dreamy and oh so sweet. That's the best way to describe this out-of-the world dessert experience. Garnish with raspberries or strawberries for an even better punch and to match Valentine's Day colors - (you can also slice the strawberries thin and they will resemble hearts!).



Ingredients
8 oz. imported white chocolate, chopped
1 3/4 cups whipping cream
4 tbsp. light corn syrup
3 oz. semisweet chocolate, chopped
Mint leaves




Methods/steps
Stir white chocolate, 1/4 cup cream and 2 tbsp. syrup in saucepan over very low heat until chocolate is melted and smooth. Pour into a bowl and allow cooling to lukewarm. Beat 3/4 cup cream with electric mixer to firm peaks. Fold cream into the white chocolate mixture in 2 batches. Divide mousse among 4 custard cups. Cover and refrigerate until firm, about 4 hours. Can be prepared up to 2 days ahead. 
Bring remaining 6 tbsp. cream and remaining 2 tbsp. corn syrup to simmer in heavy saucepan over high heat. Reduce heat to low, add semi-sweet chocolate and stir until melted and smooth. Cool to room temperature. Spoon enough sauce over each mousse to cover completely. 
Garnish with mint leaves, and with a dollop of chocolate whipped cream.

It's that time of year again! Reindeer Chow!





Reindeer Chow {Muddy Buddies}
Ingredients
  1. 14 Cups Chex cereal
  2. 18 oz holiday m&ms
  3. 12 oz semi sweet chocolate, bar or chips
  4. 1/2 Cup unsalted butter
  5. 1 Cup peanut butter
  6. 1 tsp vanilla extract
  7. 4-5 Cups powdered sugar
Instructions
  1. Melt the peanut butter and butter in a microwave safe dish. Microwave in 30 second intervals until butter is melted. Add the chocolate a little at a time until all is melted into the mix. You might need to microwave one last time to make sure everything is melted and add the vanilla. Stir together.
  2. In a large bowl add half of the cereal.
  3. Drizzle half of the chocolate peanut butter mixture into the cereal in the bowl. Mix with a spoon.
  4. Place one large paper bag into another one. Add 1/2 cup of the powdered sugar and half of the mixed cereal into the bag. Close this tightly and shake vigorously. Add more powdered sugar 1/2 cup at a time if needed until all the cereal is coated. Add 1/4 of the m&ms into the bag and toss. Place in an air tight container.
  5. Continue these step with the remaining ingredients.
  6. Keep stored in an air tight container. I personally love to keep it in the freezer, YUM!
  7. Enjoy!

It's amazing what an Apricot can do!

CHOCOLATE and APRICOTS and CRAVINGS and DR. OZ : )

So part of the Dr. Oz "rethink your diet" plan (my name for it) is to pick up items like dried apricots, slivered almonds and the like.

After eating two dried apricots, I no longer crave chocolate.

Now for those of you who actually know me, you're thinking, "NO WAY!?"

Yes way, I swear. The sweetness of them, combined with the tartness actually STOPS my craving for something chocolaty. Even thinking 'chocolate', and writing the word 'chocolate' does not make me want any, in the least, I swear!

So if you're ever in the NEED for chocolate (like right now, maybe), stop by the store and pick up a bag of Sun-Maid Mediterranean Apricots. (they did not ask me to endorse them, it just happens to be the ones I am eating! I would love some coupons, Sun-Maid! HINT HINT)

As soon as you get to the car, pop one in. Eat another a few moments later and "whammo". No more craving!!

Another thing I like to do is mix 1 TEASPOON of Golden Raisins with 1 TEASPOON of slivered almonds and 1 TEASPOON of walnuts broken up, and 1 TEASPOON chocolate chips. ("TEASPOON" = DO NOT USE MORE THAN A TEASPOON, DARN IT!)
This is a snack I like during the late afternoon or evening. It helps me from eating way too much at supper, or scrounging for a really bad-for-me dessert!

A huge glass of green tea or large mug of hot green tea (Melaleuca brand) before any meal also helps with filling up the tummy with GOOD stuff.
