FOOD REVIEW: Gluten-free Schar ~ it's what's for dinner! Pastas, Sauces, Breads

I won this tasty Schar pasta prize pack a couple of months ago and I'm just now getting around to using it.

I made the spaghetti and Vodka sauce for tonight's supper and paired it with the baguette sliced, buttered, herbed and slightly cheesy. It was also VERY easy to slice with a bread knife.
My 17 yr old son said he liked it very much!
IT WAS GREAT!
I added salt, pepper, ground basil and parmesan to the top of the spaghetti.

Waffles of Insane Greatness!

3/4 cup all-purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup whole milk or buttermilk (I recommend buttermilk)
1/3 cup vegetable oil
1 egg
1 1/2 teaspoons sugar
3/4 teaspoon vanilla extract
Butter and syrup, for serving

1. In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the milk, vegetable oil, egg, sugar and vanilla and mix well. Let the batter sit for 30 minutes.
2. Preheat a waffle iron. Spray waffle iron with non-stick spray then follow the directions on your waffle iron to cook the waffles. Serve immediately with butter and syrup.

Back to the new way of eating this week! (Dr Oz)

I started a Dr. Oz 'diet' a few weeks ago and was doing very well my first two weeks; I bought everything I needed for the new meals for two weeks, got some crappy food out of the house and was actually enjoying new flavors and a new way of cooking.
I got slack because of not having the right items in my house this last week. Plus my friend and her daughter came down for a few days so I didn't feel right 'making' them eat what I was suppose to be eating. So it got pushed to the side while all four of us ate some not-so-good-foods as well as stuff that was just not necessary.
So this morning, I got right back into the "diet" because I had bought a couple of little things over the last week so this week would be easier.
This morning I had ONE piece of wheat toast with 1 tsp of (healthy) peanut butter, and 1 whole red apple, cleaned and sliced.
Lunch is a toasted wheat English muffin with a Boca Veggie burger (I had a Boca chicken patty), 1 tsp marinara sauce, lettuce (I use baby spinach washed well), sliced tomato, red onion (I had white onion already cut up in the fridge), a little pepper, and a little oregano. YUMMY : )
I can't wait to pick a meal for tonight. It will involve fresh chicken. Maybe I will do strips pan-cooked in chili olive oil and some honey. That's always a hit.

Lunch:

The plate is now empty ; )

Would you like to see a daily posting with a pic from one of my meals? Comment!

Christmas Evening 2010

The child : )

I hope all of you had a good Christmas! Happy Birthday, Jesus!

Our day was small but fun. Just the kid, myself, mom & dad. Great food, gifts we actually needed, and some good coffee.

Zach got a new Vivitar digital vivcam from mom & dad so I've been playing with it all day. He got a cellphone (egads) from his dad and other grands, so he's been playing with that all day LOL

The artificial tree will be taken down tomorrow and since there wasn't much on it, it won't take me 10 minutes to pack everything back up. Just wasn't in the mood this year with being on the poor end of the spectrum and partially disabled. Just not up to it physically, but in mind, I'm all over it.

We're suppose to get 1-3" of snow tonight after midnight. We're in SC, I really don't think we'll get much at all. I remember hearing it last year and it didn't even rain in my area. We shall see.

Have an awesome Sunday!

UPDATE:
We got about 1.5 inches and up to 2 inches in some parts of the yard because it snowed overnight and all into the next day!
