Quick Italian Cream Cake

1 package white cake mix with pudding

3 large eggs

1 1/4 cups buttermilk

1/4 cup vegetable oil

1 (3 1/2-ounce) can flaked coconut

2/3 cup chopped pecans, toasted

3 T Rum (optional)

Cream Cheese Frosting (below)

Beat first 4 ingredients at medium speed with an electric mixer 2 minutes. Stir in coconut and pecans. Pour into 3 greased and floured 9-inch round cakepans.

Bake at 350° for 15 to 17 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes. 

Remove from pans, and cool completely on wire racks.

Sprinkle each cake layer evenly with rum, if desired; let stand 10 minutes.

Spread Cream Cheese Frosting between layers and on top and sides of cake. 

Chill 2 hours before slicing!

Cream Cheese Frosting

1 (8-ounce) package cream cheese, softened

1/2 cup butter or margarine, softened

1 (16-ounce) package powdered sugar

2 teaspoons vanilla extract

1 cup chopped pecans, toasted

Beat cream cheese and butter at medium speed with an electric mixer until smooth. Gradually add powdered sugar, beating until light and fluffy. Stir in vanilla and pecans.

Frost cake when completely cooled.

PRODUCT REVIEW: Lovely Lashes Eyelash Curler

I received these in the mail yesterday and used them already (...naturally!! I love using mascara and liner!) I like the way it doesn't pinch my eyes at the corners or middle like others have in the past.

The curl holds well while waiting for the mascara to be applied.

I have included instructions below from the company's FB page and also a graphic near the bottom on curling, and adding mascara to your lashes. I hope this helps some of you who may never have done it before.

How to Use an Eyelash Curler Properly:

Instructions

1 Remove Makeup

First of all you need to remove your eyes makeup to allow the curler being used conveniently and preventing your eyelash hair being pulled from its roots. If you try to use the curler with eyes makeup on, this will not help your eyelash hair getting curled properly, but might make them sticky. Use proper makeup removal. You can dampen a piece of cotton to clean the eyelashes hair.

2 Positioning of Curler

Put your eyelash hair right in the center of the curler, with one side of it on the hair and the other beneath the hair. Make sure your eyelash hair is in the middle of the curler so when it clamps down the hair is curled through one end to the other effectively.

3 Actual Curling

Once you are assured that your eyelash hair is positioned in the center of the curler, clamp down the curler and hold it to the position for about five seconds. Remove the curler to see if the eyelash is curled and then do the same process for the other eyelash. Although the use of the curler does not pose any major risk to eyes, still be careful about its use. Use a mirror that gives you a clear picture of what you are doing.

White Velvet Chocolate Mousse

(add thinly sliced strawberries for garnishing 'hearts')

Creamy, dreamy and oh so sweet. That's the best way to describe this out-of-the world dessert experience. Garnish with raspberries or strawberries for an even better punch and to match Valentine's Day colors - (you can also slice the strawberries thin and they will resemble hearts!).

Ingredients
8 oz. imported white chocolate, chopped
1 3/4 cups whipping cream
4 tbsp. light corn syrup
3 oz. semisweet chocolate, chopped
Mint leaves

Methods/steps
Stir white chocolate, 1/4 cup cream and 2 tbsp. syrup in saucepan over very low heat until chocolate is melted and smooth. Pour into a bowl and allow cooling to lukewarm. Beat 3/4 cup cream with electric mixer to firm peaks. Fold cream into the white chocolate mixture in 2 batches. Divide mousse among 4 custard cups. Cover and refrigerate until firm, about 4 hours. Can be prepared up to 2 days ahead. 
Bring remaining 6 tbsp. cream and remaining 2 tbsp. corn syrup to simmer in heavy saucepan over high heat. Reduce heat to low, add semi-sweet chocolate and stir until melted and smooth. Cool to room temperature. Spoon enough sauce over each mousse to cover completely. 
Garnish with mint leaves, and with a dollop of chocolate whipped cream.

MEN (and women)... soon it will be Valentine's Day - you do NOT need to spend hundreds of dollars on each other! That is a waste of hard-earned money... trust me... just use your imagination... let me tell you how cool a HOMEMADE card is along with a homemade dinner or dessert... VERY! You know why? You had to put your feelings into it. Yes, we like chocolate, we like flowers, but most of all, we like YOU as a person, otherwise we wouldn't be with you. Do not waste a load of money on something that lasts one day! And hand-holding, a hug, a kiss on the forehead... oh my, I get weak in the knees thinking about it. Just love me, that's all I ask :)

I LOVE me some good-working flashlights, so as soon as this came in this morning, I grabbed 3 of my 4 rechargeable AAA batteries from my tv remote and put them in the flashlight! HAHA!

Addendum:
