Tonight's Supper: Garlic Chicken, French-Style Green Beans, Mac~n~Cheese

Garlic Chicken, French-Style Green Beans, Mac~n~Cheese

Olive Oil
Minced Garlic
Chicken tenders or breasts
(Optional) 1-inch ea. Prepared Ginger, and Prepared Cilantro (in a tube)
S&P
1 can French-style Green Beans, rinsed, drained

1 Box Man-n-Cheese, prepared for side dish

Saute' garlic in olive oil in large pan for 2 minutes on medium heat. Add rinsed chicken tenders, cook approx 4-6 minutes on each side checking for done-ness, (approx 8 minutes each side for breasts). Add S&P, (Optional: ginger, and cilantro), stir well to distribute, push chicken to sides of pan. Add beans, stir well and heat through. Serve & enjoy :)

Quick, easy and mostly healthy, for early dinner before my son's choir practice :)

Tonight's Supper: Tilapia, Quinoa, Black Beans and Veggies

There are various ways of making fish and Quinoa... just make them to your own liking :)
Quinoa is a grain found in the specialty areas of certain grocery stores. Red is my fav, but currently I have a bag of white to use up. It is a great replacement for carbs like rice and pasta.

Tonight's Supper: Ginger Garlic Shrimp & Pasta

Ginger Garlic Shrimp & Pasta

1 bag frozen or fresh shrimp, thawed, shelled, rinsed well
1 small package of spaghetti
2 Tbsp Extra Virgin Olive Oil, divided
Fresh Parsley
1 inch of each, tubed Cilantro and Ginger
1 tsp minced Garlic
1 pat butter
1 small can diced tomatoes, any flavoring, drained

In a medium pot, add your water and 1 Tbsp olive oil. Bring to boil, salt lightly, and add spaghetti to cook for approx 10-12 minutes, stirring often.
While that is cooking, thaw, clean and rinse shrimp. Add 1 Tbsp olive oil to large skillet, add garlic, and bring to medium heat. When starting to bubble, add cilantro, garlic and parsley. Stir well. Turn dial to between low-and-medium. Add shrimp, stir to coat. let cook 2 minutes. Remember to keep stirring your spaghetti. Stir your shrimp, add butter, salt & pepper (to your taste), and drained tomatoes, stir well. Drain spaghetti well and add to shrimp mix, stir well to coat spaghetti. Serve & enjoy :)
This is my own recipe, just some stuff I had around the house one day months ago. I like it so much I make it every couple of weeks.

Tonight's Dinner: Herb Pan Tilapia with Herb Rice and Zucchini

In  a medium pot, heat 2 cups water with a chicken bullion cube, bring to boil. Add sliced, cleaned zucchini & boil for 2 minutes, remove with slotted spoon and set aside. To still boiling water, add 1 cup white rice, salt, pepper, a couple of light sprinkles of basil, stir well, cover & set heat to LOW, cook 12-15 minutes, checking for readiness by that time. Add finely chopped fresh parsley, stir well, set aside.
While rice is cooking, in large pan add EV Olive Oil, minced garlic... heat garlic a minute, then add Tilapia, cook for 4 minutes on Med/MedHigh heat on each side. Add an inch of tubed, prepared Cilantro and tubed, prepared Ginger (omit if you like)... (found in your produce area). Chop some parsley & stir in. Salt & pepper fish. Shake pan back and forth, then gently turn over fish once more. Add par-boiled zucchini around edges of pan away from fish, salt & pepper all, stir gently around edges to soak up some flavors. Serve all on top of rice.

(Parsley is good for digestion. Ginger is good for body pain and stomach issues.)

What's for Supper? Slow Cooker, Left-over, Spiral Ham Soup!

(addendum: I had to add more water after I started eating this, it was a little strong for me, but the flavor was amazing... it pretty much ended up being a full can of water.)

I also chopped some carrots. Didn't have anything else like celery, onion... 
so just using up what I have :)  (The broth can says 3lbs, the largest can you can buy. Sometimes when I make large soups like these, I need much more than small cans.)
