Tangy Hibiscus Sorbet
Makes: 1 quart

Get ready for some flower power. Hibiscus gives sorbet a bright color and a tangy flavor. One taste of this sweet treat and you'll bypass those store-bought brands.
Ingredients
1 1/2 cups granulated sugar
4 oz. dried hibiscus flowers
Zest and juice of 1 lemon
Methods/steps
Bring 5 cups water and sugar to a boil in a medium saucepan. Stir until sugar is dissolved. Remove from heat; stir in flowers and lemon zest. Cover and let steep for one hour. Fill a large bowl with ice and water; set aside. Strain syrup and discard solids. Chill in the ice bath. When it is cool, stir in lemon juice. Freeze in an ice-cream maker according to the manufacturer's instructions.

Monday Recipe 1
Spinach and Ginger Ricotta
1 Serving
This light, low-carbohydrate breakfast or lunch dish combines two of Dr Weil's favorite ingredients - greens and fresh ginger. Baby spinach or other baby greens work great in this recipe.
Start to finish: 10 minutes
Ingredients:
1 cup spinach leaves (or other greens) torn
1 egg
1 egg white
1 tsp fresh grated ginger root
1 tsp Italian or other seasoning mix
1 tbsp salsa
Instructions:
Tear up the spinach leaves and steam very briefly. (Put the torn leaves in a small saucepan with 1/4 cup of boiling water, cover the saucepan, turn off the heat and allow to steam for about 3-5 minutes. Baby spinach leaves take just 3 minutes.) Fold into the beaten eggs with the grated ginger, salsa and seasoning. Cook on a non-stick pan sprayed with cooking spray, turning as needed until the eggs are set.

A Second Chance at Easter
And as they went to tell His disciples, behold, Jesus met them, saying, "Rejoice!"
--Matthew 28:9
The resurrection of Jesus reminds us that God provides second chances.
When Jesus was crucified, it came as a shock to His followers. They just did not seem to understand that He would be crucified and rise again on the third day. When the Crucifixion actually took place, it shattered their faith.
But after His resurrection we see the risen Lord seeking out these discouraged, disheartened disciples to revive them, to reignite them.
How easily Jesus could have written them all off and said, "You didn't stand by Me in My greatest hour of need; now I am not going to stand by you in yours." But no--the Lord sought to restore them.
When Mary Magdalene went to the tomb of Jesus early in the morning, the angel told her that the Lord had risen. As she and the other Mary "went to tell His disciples, behold, Jesus met them, saying, 'Rejoice!' " (Matthew 28:9). She found the living Lord, who restored her hope and purpose in life.
Thomas missed the meeting when Jesus had appeared to the other disciples, but He reappeared when Thomas was back with the group. How gracious of Jesus to condescend to the skepticism of one single man. It almost appears that He came to that meeting simply to restore Thomas.
Remember the two discouraged disciples on the Emmaus Road? As He spoke to them, their deadened hearts began to reignite. "And they said to one another, 'Did not our heart burn within us while He talked with us on the road, and while He opened the Scriptures to us?' " (Luke 24:32). Jesus went out of His way to restore their hope.
Maybe you have doubts or fears today. The same Jesus who restored Mary, the disciples on the Emmaus Road, and the skeptical Thomas, will restore your faith. You too can discover that Jesus gives second chances.

Celebrating Easter Every Day
Luke 24:1-9
The Easter story is a message of hope. Yet many people celebrate this holiday with only chocolate bunnies and egg hunts because they do not know its real purpose. The gospel is precious information that Jesus asked His followers to spread widely (Matt. 28:19). He expects that each of us will be prepared to answer those who are curious about the hope we have (1 Peter 3:15).
Christianity is unique. Other religions and belief systems have a "doer" philosophy. In other words, to achieve eternal life, a follower must follow leaders' instructions, adhere to rules, and/or give as much as he is told. The Christian life also includes good works, obeying commandments, and tithing. However, these activities are the result of serving Christ rather than a supposed method for reaching heaven. Instead of placing our hope in human ambition and diligence, we recognize Jesus as the only path to God.
Jesus Christ's primary purpose in coming to earth was to die for mankind's transgressions. Had He stayed in His tomb, everyone would be responsible for his or her own sin-debt. But Jesus conquered the grave, which means that His followers can too. Those who believe in Him are released from their death penalty and invited to spend eternity with God.
What are you doing with the amazing message of God's love? The commission to "go and make disciples" is meant to be an integral part of every believer's life. We should share about Jesus while at home, at work, among friends, or pursuing hobbies. In other words, we are to celebrate Easter every day.

Several Recipes
Best Casserole Chili Rellano
Makes: 8 servings

When you're searching for an awesome Mexican dish, this is an eggs-cellent option. Prepared with cheese, eggs and chilies, it's sure to spice up your life.
Ingredients
3 7-oz. cans whole green chilies, drained
3/4 lb. each of jack and mild cheddar cheeses
12 oz. evaporated milk
3 Tbsp. flour
Salt
4 eggs
Tabasco Sauce
10 oz. can green chili salsa
Methods/steps
Make batter of flour, eggs, milk and salt. Pour half of batter in bottom of 9 x 12-inch casserole dish. Layer chilies on batter. Shred cheeses and sprinkle over chilies. Pour rest of batter over cheese. Bake at 325 degrees for 45 minutes. Pour salsa with Tabasco over casserole. Bake 15 minutes longer. Best served hot, but let sit a few minutes before serving.

Early Morning Pancakes
Makes: 3 servings 6 pancakes

The early bird gets the warm... pancakes that is. Enjoy these perfectly-prepared pancakes with a pat of butter or with a serving of warm syrup. They take the cakes.
Ingredients
1 cup all-purpose flour
1 Tbsp. raw sugar
2 tsp. double-acting baking powder
1/4 tsp. salt
1 egg
1 cup skim milk
2 Tbsp. light olive oil
1 tsp. pure vanilla extract
Methods/steps
Preheat to medium heat a large non-stick griddle. We use a double burner griddle.
In a large mixing bowl, mix together the dry ingredients.
In another bowl, beat the egg and then mix together the remaining moist ingredients.
Dump the wet ingredient mixture to the dry mixture.
Stir until everything is just blended although you will still have some lumps. Put a very light coat of oil onto the pan by putting a small amount of it onto the pan and spreading out with a paper towel and a spatula.
Put about 1/6 of the batter onto the hot skillet and cook until the edges appear dry and top of pancake bubbly. The bottom should be golden brown before turning. Turn and cook until golden on the other side.
Serve with real maple syrup and butter.

Hot Dog Fondue

If you've got kids, you frankly can't go wrong with this recipe. The cheese sauce is the perfect thing to dip your favorite frankfurters in. This hot dog of a recipe will keep them coming back for more every time!
Ingredients
1 1/2 cups cheddar cheese or American cheese (in cubes)
1/2 cup milk
1 (8 oz.) can tomato sauce
8 frankfurters or hot dogs (cut into fourths)
Methods/steps
Melt the cheese and milk in a fondue pot or double boiler. Add the tomato sauce to the pot; heat and stir until well blended. Broil the frankfurters until done. Dunk the franks into the fondue and then into your choice of mustard, relish, or Worcestershire sauce.

Tamales make for a great snack or an entire meal. Prepare these tamales in bulk and you can freeze them for a later date. Then just heat and eat.
Ingredients
1/2 lb. large cornhusks
5 lb. pork
2 (10 oz.) cans Enchilada Sauce
1/3 cup chili powder
6 cups Masa Harina
Methods/steps
Cook meat in water until tender. Salt to taste. Prepare the Masa Dough as directed on pkg. for tamales. Mix Enchilada sauce and chili powder with the meat and simmer 5 minutes. You may want to add more chili powder. Rinse and soak the corn husks till pliable. Drain thoroughly. Spread about 2 Tbsp. dough on lower half of husk. Put 2 or 3 Tbsp. meat mixture on dough. Fold one side over, then fold the second side over a little past the middle. It should hold together because of the dough. Fold the end up. Place folded end down in steamer, making sure it doesn't tip. Put husks on top of filled steamer. Cover and steam about 45 minutes or till dough peels away from cornhusk. Don't let steamer boil dry!

Easter - Jesus did it all out of love!

Jesus did it all out of love!
Okay… this is for all you church members out there.
In his last hours with his disciples, Jesus made a promise. It’s a promise that still applies to us today because we too are his disciples. Jesus said: “I am leaving you with a gift – peace of mind and heart. And the peace I give is a gift the world cannot give. So don’t be troubled or afraid.” John 14:27
The peace Jesus is talking about is not the peace of forgiven sins, although we certainly have a great peace because our sins have been forgiven. This particular peace comes when a person gives himself/herself fully to Jesus – nothing held back. In other words, the issue of Lordship is settled.
Obviously, this kind of peace is unknown to the unsaved. But sadly, many church members do not know this peace.
So can a person be saved and miss out on this peace? Yes. You see, you may have settled the Savior issue but you have not settled the Lordship issue. Have you truly given it all to him? Are you holding back? Jesus is Lord of all or he is not Lord at all in your life. Which is it for you?
There is a driver’s seat in your heart. There is room for only one person in that seat. So who is sitting in the driver’s seat? You or Jesus?
Now read this part carefully. One day Jesus will speak some very frightening, heart-breaking words. These words will be spoken to many “church members.”
“Not everyone who calls out to me, ‘Lord! Lord!’ will enter the Kingdom of Heaven. Only those who actually do the will of my Father in heaven will enter. On judgment day many will say to me, ‘Lord! Lord! We prophesied in your name and cast out demons in your name and performed many miracles in your name.’ But I will reply, ‘I never knew you. Get away from me, you who break God’s laws.’ Matthew 7:21-23 (NLT)
So do you really have the peace of mind and heart this Easter? I pray that you never hear the words “I never knew you.” Settle it today!
